In order to provide healthy food (meat) for humans, enriched with antioxidants, we performed the initial experiments on Wister albino rats pretreated with CoQ10 (16 mg/kg, i.m., every fifth day) and with olive oil (0.1 mL, i.m., every fifth day), during 30 days. The AsA, Vit E and CoQ10 concentrations were detected in sceletal muscle (M. gastrocnaemius) at the end of treatment. The results show significant increase of AsA, Vit E (p is less than 0.005) and CoQ10 (p is less than 0.05) content in muscle of CoQ10-treated animals in comparison to the control value. In rats treated with olive oil the significant increase of muscle AsA and VitE (p is less than 0.005) levels were observed. On the basis of the preliminary results on rats, we suggest pretreatment of cattle with some antioxidants in order to increase oxidant stability of meat and improve the quality of human diet.
