On the basis results obtained, it was concluded that the air-flow drying model proves to be optimal for defining parameters of convective drying. The study of kinetics of plum drying included different characteristics of fresh fruits (fruit size, dry matter content) which affected the duration of the drying process, fruit behaviour during the process and the quality of prunes. Such an approach provides optimal parameters of drying procedure and the quality of prunes.
