[Analysis of epizootic situation of feed area of meat processing enterprise in view of post-slaughter veterinary sanitary examination of meat]

An analysis of the epizootic situation of feed areas of meat processing enterprises in the Kaluga and Penza regions was carried out according to a veterinary examination of slaughtered animals and veterinary-sanitary examination of meat and meat products. The dynamics of arriving cattle and pigs for slaughter from 2000 to 2005 is shown. As was found, over the study period the slaughter animals had no cases of anthrax. In the Penza region echinococcosis (3070), dicroceliosis (1809), fasciolosis (1739) and noncontiguous diseases (1278) were recorded more often in slaughter cattle and pigs. In the Kaluga region fasciolosis (3202) and ND – (12694 – in 2000, 2005 – 17664 and 8132, respectively) were recorded. The monitoring of feed areas has shown that the following diseases in cattle: leucosis and salmonellosis, cysticercosis, echnococcosis and fasciolosis, as well as 8132-18398 cases of different noncontiguous diseases (DND); among pigs: cysticercosis and echinococcosis and 1093-2744 cases of DND. The Penza region was characterized by salmonellosis, cysticercosis, echinococcosis, fasciolosis, dycroceliosis, dyctiocaulosis in cattle and 1031-6764 cases of DND. Among infectious diseases in meat processing enterprises wildfire, pseudotuberculosis, actinomycosis, pasteurellosis, and leptospirosis were found, among invasive diseases – metastrongylosis, pasteurellosis, coccidiosis, onchocercosis and ascaridiosis; among noncontiguous disease – white-muscle disease, ketoses, abscesses, lung aspiration, cardiac, hepatic and nephritic pathology. It is concluded that qualified veterinary sanitary control of raw meet in meat process enterprises is a guarantee of ecological safety of meat and meat products.
