Sorption capacity of biomodified connective tissue of slaughter animals

Heavy metal ions are among the most dangerous environmental factors. It is necessary to include into foods ingredients which can sorb or to fix them and also radionuclides expressing selective functions. The elements of connective tissues, collagen and elastin, can be named as these perspective components as they have importance in electrolitic metabolism in a gastrointestinal tract. Removal of trimming, tendons and fascia of cattle, have served as raw materials for collagen hydrolisate (CH). Experiments in vitro are hold to determine CH sorbtion capacity towards Pb and Cd ions. The experiments are done at different pH factor meanings; time and temperature of the contacts have corresponded to the ones of a gastrointestinal tract. It is shown up that CH can be compared with cellulose that sorb Cd and Pb ions at a dose of 0.1-0.23 mg per g. So, CH is a good sorbent for heavy metals and it is perspective to be used as a functional additive at meat food production
