Technology of complex processing of Vaccinium uliginosum L. and production on the base functional instant product

Vaccinium uliginosum growing in the northeastern part of the Tomsk Region has served as a test object. It is shown that received extract, juice and pomace (PC) are products of high nutritive value, but dietary supplements are shared irregularly in them: there are more carbohydrates, proteins, fibers, vitamins B1 and PP, beta-carotin in the juice and vitamin C content (70 milligram/100 gram) exceeds daily requirement in 1.5 times; insoluble or poor soluble polysaccharides and the main part of mineral elements remain in the PC except for soluble pectins and beta-carotin; mineral content is a little lower in the extraxt, but they are of easy digestible form. Beside that the extract is rich by vitamins B2 and C and by K, Ca and Fe. A technology has been developed for complex processing of the named products and production of instant granulate products, fool and breakfast. Organoleptic properties of the new products have been analyzed and it is shown that they have high consumer properties and can be compared with analogues. Chemical, vitamin and mineral composition of the products has been studied and the breakfast is concluded to be of higher nutritive value than the fool. Antioxodant amount in terms of ionol is higher by 20% in the breakfast than in the fool. Thus, the developed instant products can be named as functional products by their composition, biological and nutritive value and antioxidant activity
