Xanthan gum is a heteropolysaccharide produced by a bacteria strain of , Xanthomonas. Due to the excellent properties, the dissolubility in different salt concentrations and its stabilization in changing pH's and temperatures, it is used for many industrial applications such as petrochemical, pharmaceutical, cosmetics and food industries. In this study, the production of xanthan gum from Xanthomonas campestris TISTR 1100 was optimized. Firstly, the optimal glucose concentration on growth of X. campestris TISTR 1100 was found of 13 g/l with the maximum specific growth rate of 0.0513/h. Secondly, the optimal C/N ratio on the production of xanthan gum was 10 g/l with the maximum xanthan gum of 7.8 g/l.
