The aim of this study is to determine some quality parameters of unifloral honeys obtained in Bulgaria, to analyse and summarize existing data, and to develop reference tables for each species. The research included 227 samples of unifloral honeys – robinia honey, lime honey and sunflower honey. Samples were taken directly from producers from different regions of the country, from stores or from such submitted to the supervisory authorities of Directorate for Veterinary Public Health for quality control. Declared botanical origin of honey samples was verified by organoleptic analysis, pollen analysis and physico-chemical analysis. Water content, the amount of proline, the specific optical activity, electrical conductivity, pH , acidity, diastase and invertase activity are determined by official methods proposed by International Honey Commission - Bogdanov et al., 1997. It was found that the composition and physico-chemical properties depend on botanical origin of unifloral honeys. Reference tables are proposed which allow by comparison of data from tests with them to make reliable conclusions about the botanical origin of the honey.
