Batch cultures of mixed rumen microorganisms were used to study the effects of a yeast hydrolysate from S. cerevisiae (LEV) on the in vitro fermentation of two sheep diets (milk and fattening). In 16 h incubations, LEV increased (P<0.05) total VFA and butyric production, and tended (P<0.10) to increase acetic production for fattening diet. For milk diet, LEV tended (P<0.10) to decrease propionic production, and significantly increased (P<0.05) the acetic/propionic ratio. Gas production and ammonia concentration were increased (P<0.05) by LEV for the fattening diet. Methane production and pH were unaffected by LEV treatment. The results show that LEV stimulated in vitro ruminal fermentation when a high concentrate diet (fattening) was incubated, but no effects were detected for a more fibrous (milk) diet.
