Studies on fungal flora developing on bread at Njala, Sierra Leone.

The mycoflora developing on slices of bread exposed for 1, 5, 10, and 15 min was studied during wet (June and October 1970) and dry (November-December 1970) seasons. The colonization of bread slices started earlier during the wet season than during the dry season. A direct relationship between the number of colonies and the exposure time was noted. Fungi mainly involved included species of Aspergillus and Penicillium and less commonly species of Fusarium and Cladosporium. Occasionally Chaetomium olivaceum, Curvularia pallescens, Glomerella cingulata, Hypomyces sp., Nigrospora sphaerica, Nodulisporium gregarium, an undeterminate Basidiomycete and a sterile fungus were isolated. The fungi isolated during the study represented 11 genera and 33 species. Perhaps species of Rhizopus and Mucor are not always associated with bread spoilage as is commonly believed. The number of fungi responsible for bread spoilage appears more numerous than hitherto recognized.
