Aiming at identifying optimal terms of fruit harvesting for the purposes of fruit processing industry, we have studied major properties of fruits of plum cultivars: Cacanska Lepotica, Cacanska Najbolja, Cacanska Rodna and Stanley, from their physiological ripeness and during seven subsequent days. Besides the determination of fruit and pit size and mass, we also checked soluble solids content in flesh. All the studied cultivars can be used as dessert cultivars in the phase of physiological ripeness, whereas fruits harvested in the first phase of harvesting period can be used for various forms of processing into preserves, compote and jam. When they reach the phase of physiological ripeness, fruits of Cacanska Rodna and Stanley can be used for drying and brandy making.
