[Functional drinks for school children based on plant phospholipids]

Dry mixtures for cocktails (DMC) are the most reasonable functional products for school children, because it is possible to use different ingredients for make them having specify functional properties. Particularly this can be a (DS) Vitol and also a balanced complex of vitamins and mineral nutrients. The DS Vitol is high purified sunflower phospholipids (no less than 95%), a phosphatidcholine fraction composes no less than 30% in them. Pumpkin juice (PJ) is chosen as a base of the functional product. To use natural PJ is not always possible, that is why the DS Tykovka is chosen as an alternative one. The last is characterized by high content of polyunsaturated fatty acids, proteins, food fibres, fat- and water-soluble vitamins, macro- and microelements. Ascorbic acid and Na alginate (for enrichments by iodine) are chosen as accessory substances. Formulations of DMC are developed factoring in 30% supply of daily requirement of physiologically functional ingredients. The formulation (1) includes using natural PJ and the formulation (2) includes using water. The daily intake of the DMC (1) is 0.0025 kg and the one of the DMC (2) 0.0225 kg. Homogenous cocktails which do not break in time, can be made by shaking DMC for 1 minute in electrical blender. DMC have been packaged in 500-gram polymer containers and have been kept during 12 months at 18+-3 deg C and humidity of 75%. It is found out that organoleptic and chemicophysical properties of DMC practically do not change during the storage period: losses of vitamin C are no more than 10%, the ones of beta-carotine are no more than 7%; intestinal bacteria and pathogenic microorganisms are not found
