Quality improvement of broiler meat

Effects of compound feeds supplemented by the bifidum (BF) and lecithin (LT) on slaughter and meat qualities of broiler chickens were studied. Three test groups and 1 control group were formed. The control group was fed by a basal ration (BR), group 1 was done by BR+BF, group 2 was done by BR+LT, group 3 was feeded by BR+BF+LT. The broilers were grown for 42 days. Combined addition of BF and LT had the best effect on slaughter traits and chemical composition of poultry meat. Group 3 had a slaughter yield raised by 2.5%, ration esculent and unedible carcass parts increased by 16.3%. Dry matter and protein content in breast and femoral muscles increased by 1.38 and 0.48% and by 0.69 and 0.53% respectively in compare with the control meanings. Meat biological value was higher than the control one by 1.19 units. Ratio unsaturated and saturated fatty acids was higher by 0.26 units. Results of meat degustation of tested poultry showed that meat chemical composition and biological value influenced on its organoleptic properties. Meat samples of group 3 had the highest total assessment leading the control group by 0.8 score
