The study involved mineral waters (MW) – Gornaya prokhlada, Tib-2, Karmadon, Ursdon, Zamankul, Ariana from wild fruits and berries found in the territory of the North Osetiya. The results of determining the nutritional and biological value of fruit and berry feedstock, organoleptic and physico-chemical characteristics, safety parameters are given. As a base of the beverage serves water that is transparent, colorless, odorless, tasting well or tasteless forming no precipitant when stored. As is found, as a base for beverage, mineral waters relating to table and curative table low mineralized waters can be used, the best is mineral water containing most ions – Tib-2 and Zamankul. To determine the competitiveness in the single European market, estimate was the compliance of mineral water with the European Safety Standard. As is found, only Gornaya prokhlada meets the EC safety requirements. The formulas of series of beverage Lesnoi aromat have been developed. The beverages are low energetic and can be used both in the ordinary ration and as diabetic and dietary. Introducing in the formulas natural juices, enriching in carbon dioxide, adding a sweating agent from Stevia and a natural preserving agent from walnut imparts the beverages high antimicrobial activity and prolongs the storage life up to 30 days
