Beef quality and meat productivity of youngsters obtained by crossing The Bestuzhev cows with Angus, Hereford and Charolais bulls was estimated. The youngsters were slaughtered at the age of 18-19 months. The study has shown that the yield of the edible parts in the carcasses of animals obtained from steers of Charolais breed increased to the growth of muscular tissue. The meat from animals of Bestuzhev breed and hybrid animals has high energy value connected with higher fat content. The gentleness index was higher by 4.1% in Hereford animals and by 8.5% in Charolais youngsters compared to Bestuzhev youngsters. By the content of protein hybrids in any cases exceeded to Bestuzhev bulls. To produce a delicate beef with stable content of protein and fat cows should be crossed with Angus and Hereford cows, for meat processing in sausage production – with Charolais bulls.
