Китайский. [目的] 筛选水解伴大豆球蛋白效率高的蛋白酶。[方法] 采用几种常用的蛋白酶水解伴大豆球蛋白, 以水解度为指标, 筛选最适水解伴大豆球蛋白的蛋白酶, 并对水解工艺进行初步优化研究。[结果] 在相同水解条件下, 复合风味蛋白酶对伴大豆球蛋白的水解能力相对较强, 水解率达到22 % , 因而选用其作为酶解伴大豆球蛋白的工具酶。通过单因素试验和正交试验确定复合风味蛋白酶水解伴大豆球蛋白的最佳条件:pH 值为7 , 温度为50 ℃, 底物浓度为14% , 酶与底物浓度比为6% , 酶解时间为8 h。[结论] 该研究为伴大豆球蛋白的开发应用提供了理论和试验依据。

[Objective] The aim was to screen the high efficient protease for hydrolyzing conglycinin.[Method] Several common proteases were selected for hydrolyzing conglycinin. With the hydrolysis degree as index ,the suitable protease for hydrolyzing conglycinin was screened out and the hydrolysis process was optimized preliminarily .[Result] Under the same hydrolysis condition ,the hydrolysis ability of flavourzyme on conglycinin was stronger relatively and its hydrolysis rate reached 22 % .So the flavourzyme was selected as the tool enzyme for hydrolyzing conglycinin .The optimum condition of hydrolyzing conglycinin with flavourzyme was ascertained through single factor experiment and the orthogonal test ,which was as follows : the pH value at 7 ,temperature at 50 ℃,substrate concn .at 14% ,enzyme- substrate concn .ratio at 6% and hydrolysis for 8 h.[ Conclusion] The research provided theoretical and experimental basis for developing and applying conglycinin.
