[目的]为云南石屏县那刀辣与小米辣的开发利用提供科学依据。[方法]以石屏县那刀辣与小米辣为材料,采用原子吸收光谱法测定其中的矿质元素含量。[结果]小米辣Ca、Fe含量分别比那刀辣高235.0、4.1 mg/kg,那刀辣Mg、Zn、Cu、Co、Ni含量分别比小米辣高71.20、_0.84_、0.02、0.125、1.05 mg/kg;2种辣椒Mg含量最高,分别为1 948.3和1 877.1 mg/kg,Ca含量次之,分别为347.5、582.5 mg/kg,Co含量最低,分别为0.650 0、0.525 0 mg/kg;2种辣椒所分析7种矿质元素的含量依次为:MgCaFeZnCu NiCo,矿质元素的加标回收率为_97.18_%~107.77%,测定结果的相对标准偏差为0.43%~1.86%。[结论]那刀辣与小米辣中矿质元素含量存在一定差异。

[Objective] The aim was to provide the scientific basis for the development and utilization of Nadao capsicum and Xiaomi capsicum from Shiping of Yunnan Province. [Method]With Nadao capsicum and Xiaomi capsicum from Shiping Country as the materials, their mineral element contents was determined by atomic absorption spectrometry. [Result] The contents of Ca and Fe in Xiaomi capsicum were higher 235.0 and 4.1 mg/kg than those in Nadao capsicum resp., while the contents of Mg, Zn, Cu, Co and Ni in Nadao capsicum were higher 71.20, 0.84, 0.02, 0.125 and 1.05 mg/kg than those in Xiaomi capsicum. Mg content in 2 kinds of capsicum was the highest, being 1 948.3 and 1 877.1 mg/kg resp., and the following was that of Ca, being 347.5 and 582.5 mg/kg resp., Co content in 2 kinds of capsicum was the lowest, being 0.650 0 and 0.525 0 mg/kg resp. The contents of 7 kinds of analyzed mineral element in 2 kinds of capsicum in order was: MgCaFeZnCu NiCo, and the recovery of standard addition of the mineral elements was 97.18%-107.77% with relative standard deviation of 0.43%-1.86%. [Conclusion] The mineral element contents in Nadao capsicum and Xiaomi capsicum had some differences.
