Fatty acids (FA) composition of Pasternaca sativa (Kruglyj, Belyj Aist cultivars), Apium graveolens (Atlant, Zakhar, Samuraj, Grobovskij), Petroselinum sativum (Briz, Sakharnaya Kornevaya) and Daucus carota (Moskovskaya Zimnyaya A-515) seeds was investigated. It was shown that oleic acid (C18:1) content (61-78%) was relatively constant for different Apiaceae varieties in contrast with linoleic acid (C18:2). Content of linoleic acid was minimum (9.79%) in petiolar celery (Atlant) and it was maximum (30.6%) in leaf parsley. There are a direct correlation between seed germination and oleic acid content (r=0, 8612) and a reverse one between seed germination and the content of linoleic acid (r=-0,6507). At low temperatures these correlations were opposite. A high nutritional value of Apiaceae seed oil was also discussed. So it was proved that FA content in Apiaceae seeds could be a main factor of seed quality. Oil of P. sativa seeds can be considered as the good source of essential FA.
