The acting normative documentation for infant food comprises limitation of particle size. The number of particles exceeding 0.2 mm should not be more than 20% of the total mass of a product. The production of infant foods provides the following characteristics of grinding raw materials: for homogenized – the particle size is not more than 800 micron, pureed – 800-1500 micron, coarse ground – 2-3 mm. Minced canned meets for infant nutrition were studied. The particle fineness of components of 6 types of pureed and 12 types of homogenized canned meats was measured. The particle sizes of bone powder used to enrich them in minerals was determined. A histological study of homogenized canned meats showed that the particle fineness of all samples is within 0.5 and 140 micron, the most of components has a size of 210-280 micron. The most of particles having maximum sizes relate to plant components confirming thereby the necessity to grind them additionally before they are introduced in the composition of canned meats. A microstructure analysis showed that the primary bone powder should be also subject to special grinding. The microstructure studies were conducted by a light microscope using a image analysis computer system. Legally substantiated similar analysis requires developing state normative documents
