The contamination level of foods with mycotoxins was analyzed in terms of 4874 samples selected in 2002-2006 in the territory of the Krasnodar Krai. Only the samples whose contamination did not exceed the maximum allowable level (MAL were considered. The contamination coefficients (CC) were calculated for individual toxins and groups of foods (in percentage of MAL). Throughout the period the maximum average CC were observed for aflatoxins. The most content of aflatoxin M1 was observed in the group "Milk and dairy products" (CC 71.5%), aflatoxin B1 (in the group "Vegetables and fruit" (subgroup "Nuts" – CC 61.2%). In 2002 the great contamination of cereal products with toxin T-2 was found, CC in the subgroup "Bread, bun and fancy goods" reached 46.8%. As a whole, CC for individual toxins are characterized by greater variability in years. So, the yearly average CC for aflatoxin M1 varied from 33.0 to 95.3%, for aflatoxin B1 – from 14.9 to 42.6%, for aflatoxin T2 – from 11.4 to 14.50%. As exemplified by this study the efficiency of using an universal assessment model of the level of actual contamination of foods allowing thereby optimizing the actions to control the content mycotoxins in them
