In course of the research there was studied the biological value of triticale (Triticosecale) grain of the released varieties and promising variety samples. The research was realized in the conditions of the Republic of Belarus on the experimental fields of the Scientific and Practical Center for Arable Farming of the National Academy of Sciences. As a result of realized research it was revealed that by some essential amino acids triticale grain exceeded rye (Secale cereale) and sometimes wheat (Triticum aestivum). Lysine content in triticale grain made up 3.8% of crude protein. High variability of the parameters 'height of amylograme' and 'falling number' of water and flour suspensions and direct significant correlation between them (r = 0.68) have been revealed, that made them effective for indirect estimation of the viscosity of grain extract for the selection of varieties with minimal viscosity level for forage purposes. Use of enzymes B-glucanase, xylanase, cellulase, a-amylase and their complexes), having influence on different groups of the carbohydrate part of triticale grain, and conserving of wet rolled grain reduced the viscosity of water suspension by 11-42% and 24-39%, respectively.
