It is a fact that coconut palm affords a large variety of products and as commodity, it is a special comparative superiority, but Indonesia as the bigest coconut producing country over the world has not utilized every part of the nut. It can be indicated by the development of variety of its coconut processing industry. Coconut sap process is one alternative of the variety of coconut processing products. Based on its characteristics, coconut sap can be processed into some products such as sugar, nata de coco, alcoholic beverage and acetic acid.
