Four types of pollen pellets were gathered by honey bees from plant sources, i.e. sunflower, Egyptian clover, maize and broad bean. General chemical analysis was carried out to determine their chemical composition (protein, fat, carbohydrate fractions, minerals, free amino acids, nucleic acids and pigments (Chlorophyll a, b and carotenoids). Special interest was given to study the chemical composition of fatty acids and unsaponifiable matters using GLC analysis. Protein content was subsequently extracted by different methods. Electrophoretic separation of different extracts in SDS-PAGE revealed that most of pollen pellets protein bands were found in albumin and globulin fractions. The protein content of different extracted fractions were quantitatively determined. Results indicated that lipid protein constituents of pollen grains, taken as a group, may provide a key for the identification of pollen sources.
