A comparative study on changes in some physicochemical parameters during ripening of four cultivars of banana [in Bangladesh].

Changes in weight and pulp to peel ratio and in the per cent content of moisture, dry matter, total soluble soil and ash during six defined stages of reopening of four banana cultivars, namely, Amritasagar, Sabri Champa and Japkathali were studied and compared. Pulp to peel ratio, percentage of total soluble solid and of moisture content were found to increase significantly during ripening. Percentage of ash also increased in all the cultivars except in Japkathali where no significant change was observed. Weight and per cent dry matter decreased during ripening in all the cultivars. Total soluble solid content and pulp to peel ratio changed more markedly than other parameters.
