This article discusses the pilot-testing of a cardiovascular health curriculum designed for fifth grade students in the Southwest. The curriculum was developed after a survey was administered to the children to determine eating behaviors and favorite foods. The curriculum was designed to include cultural foods in a heart-healthy diet.
