Identical vinegar samples were cleaned with (1) adsorption clay and (2) membrane filtration. Then the vinegar was evaporated and the residue was analysed. After traditional clarification the vinegar contained 2.5 times more dry substance because during the clarification process the vinegar dissolved a lot of sodium, calcium and magnesium from the adsorption clay. Slightly higher nitrogen content indicated the presence of more protein in the membrane filtered sample. Organoleptically no difference has been found. Both methods resulted in microbiologically stable product.
