At the age of 1 year female pheasants reached an average live weight of 1,044 g and male ones reached 1,147 g. Feather quantity was 5.1% in females and 3.2% in males and inedible offal quantities were 14.8% and 6.9% respectively. Dressing percentage was better in males (83.1%) than in females (72.4%). The average share of parts obtained by cutting pheasant carcasses varied between the age of 6 and 12 months. Meat, skin and bone quantity in breasts and legs was different in males and in females. There were no differences in protein contents in separate body parts between males and females, but there were differences regarding fat content in separate parts. Sexual differences were manifested through connective tissue quantities and total pigments content.
