The content and composition of lipid fatty acids in common carp, grass carp, and silver and bighead carp meat from the spring and autumn fishing was investigated. Besides, chemical composition was determined, dressing percentage at cutting was estimated and morphometric measuring were performed in the meat of these same fishes. On the basis of high content of polyunsaturated, that is, n-3 fatty acids, as well as on the basis of the other results obtained, the high nutritive value of bighead and silver carp meat was found. The same value was somewhat lower in grass carp meat and the lowest was in common carp meat. Based on the results obtained for lipid composition in meat, the thesis on biological and nutritive value of grass carp and specially of both silver and bighead carp species investigated was confirmed.
