Bacteria Bacillus circulans in shaking cultures on whey medium enriched of soya bean flour and wheat germs, in temperature 30 degrees C, at the neutral reaction, have synthesized extracellular hydrolytic enzymes, among which of serine proteinases and metalloproteinases have been superior, amylases, lipases and cellulases too. Both hemoglobin from pH 6.0 to 10.0 and casein at pH 7.5 were in the most degree digested by examined bacillopeptidases. The studied proteinases have clotted of milk casein in comparable conditions with commercial preparation Fromase. Their specifity against isoelectric casein and on casein fractions alfa, beta, kappa, was lower at comparison with calf rennin. Bacterial proteinases except kappa casein also alpha and beta fractions have hydrolysed. Over hemoglobin and casein Bacillus circulans proteinases have hydrolysed also the others proteins such: albumin, gluten, gealtin, trypsinogen and pepsin.
