The design of the automatic control for the mass exchange process such as the counter-current sugar extraction of beet cossettes by means of hot water in continuous diffusers requires a profound study of the process dynamics. To monitor the sugar extraction in slope diffusers the modelling method is proposed. A new computing method was used for simulating sugar extraction. It consists in numerical solving of the partial differential equations describing the counter-current sugar extraction process. This method is available for all types of diffusers to its universality. The stabilization of the sugar content in exhausted pulp was examined
