Antifungal effect of benzoate and sorbate on Penicillium citrinum isolated from rice noodle

Penicillium citrinum, isolated from spoilage rice noodle, was tested to evaluate the effectiveness of sodium benzoate, potassium sorbate and their combinations using spore inoculation method at concentrations of 3-6 log spores/ml. Results indicated that media sterilization process had unaffected on antifungal activity of any spore inoculum while freshness of solutions showed little effect on its activity. A decrease in inhibitory effectiveness was observed as increasing the inoculum size resulting in an increase in the minimum inhibitory concentration (MIC) of each preservative. The MIC values of sorbate, for fungal inoculum between 3-6 log spores/ml, was lower than 800 ppm except MIC of 6 log spores/ml (1,000 ppm). For benzoate, the MICs of 3-4 and 5 log spores/ml were 800 and 1,000 ppm respectively. However, no inhibitory effect was observed in 1,000 ppm at inoculum of 6 log spores/ml. Results indicated that benzoate showed less inhibitory effectiveness. The combination of their preservatives increases it effectiveness and the combination of sorbate and benzoate at 600+400 ppm completely inhibited P. citrinum at 5 log spores/ml.
