Isolation, screening and identification of lactic acid bacteria with trypsin inhibitor reduction ability from raw soybean pulp

Fifty six lactic acid bacteria (LAB) were isolated from soybean pulp (SBP). All these isolates were tested for proteolytic activity and it was found that 7 isolates showed the ability to digest proteins.The reduction activities against trypsin inhibitor of the isolates SBP3, SBP10, SBP16, SBP20, SBP24,SBP43 and SBP45 were 15.29, 34.11, 24.87, 21.49, 15.84, 12.67 and 26.57 percent respectively. SBP10, the most active isolate to reduce trypsin inhibitor, was further identified using morphological, physical and biochemical characteristics according to the guideline from Bergey's Manual of Determinative Bacteriologyincluding nucleotide analysis in 16S rDNA gene.The result showed that the 16S rDNA nucleotide sequence of SBP10 was identical to that of Lactobacillus fermentum (100 percent similarity).
