The objective of the present study was to follow up the changes in the fatty acid profile of sheep milk from the Rhodope Tsigay breed raised in the region of the Middle and the West Rhodopes. The investigations in the two regions were carried out during the second half of the lactation (from 30th April till 30th June) with two groups of 10 resp. 6 ewes at third lactation. It has been established that with the highest concentration of saturated fatty acids (SFA) is the milk of the series from 30th May (69,35 g/100g fat from the region of Borino and 69,13g/100g fat from the region of Smolyan), and their lowest quantity in the sheep milk is at the beginning of the pasture period (62,09 g/100g ffat from the region of Borino-Dospat 62,38 g/100g fat from the region of Smolyan). The level of the monounsaturated fatty acids (MUFA) in the milks from both regions decreases ith the advance of the lactation (May and June). The content of the conjugated linolic acids (CLA) is highest in both regions in the period till 30th April (2,92g/100g fat for the region of Dospat-Borino and 2,62g/100g fat for the region of Smolyan) and gradually decreases with the advance of lactation to 2,29 respectively 1,80 g/100g fat. The content of the other biologically active substances in milk as ω-3, and ω-6 acids as well as the vaccenic acid (C18:1trans11) decrease stepwise in the course of lactation. The levels of the СLA-isomer С18:2c9,t11 in the milk from both regions vary depending on the season from 2,45 to 1,43 g/100g fat.
