Lipase mediated production of structured lipids from palm oil

Structured lipids (SLs) are lipids that have been modified chemically or enzymatically in order to change their structure. They have unique chemical, physical, or physiologicalproperties that are not observed by simply blending mixtures of the starting fats and oils. Today SLs can be used to design lipid ingredients that have beneficial properties in relation to various health benefits. Application of lipase for the production of palm-based SLs will be discussed. Various lipase mediated palm-based SLs will be examined. Most recently we have been involved in the production of high purity diacylglycerol oil by partial hydrolysis. Response surface methodology was applied to optimize the reaction conditions namely water content, enzyme load, reactiontemperature and reaction time to produce a high diacylglycerol and low triacylglycerol oil. Well fitting models were successfully established for diacylglycerol. All the reaction conditions had positive effects on diacyglycerol yield with enzyme load having thegreatest effect followed by reaction temperature, water content and reaction time.
