Современные аспекты оценки качественного состава молока по биоэнергетическому статусу коров | Modern aspects of evaluation of the quality of milk according the bioenergetic status of the cows

Русский. Исследования проводили на молочном поголовье коров черно-пестрой голштинизированной породы 1-5-й лактаций со средним удоем за лактацию 4250 кг молока. Предложена методика оценки качественного состава молока по уровню биоэлектрического потенциала (БП) поверхностно локализованных биологически активных центров (ПЛБАЦ) коров. Определяли физико-химический состав молока опытных коров и устанавливали зависимость между БП ПЛБАЦ и технологическими свойствами (массовая доля жира и массовая доля белка) молока-сырья. Были изучены также жирнокислотный состав липидов молока и генотип каппа-казеина коров. Установлена коррелятивная взаимосвязь между уровнем среднего БП ПЛБАЦ коров и всеми изученными показателями. При увеличении уровня среднего БП ПЛБАЦ животных прослеживалось достоверное увеличение содержания полиненасыщенных жирных кислот в молочном жире. Для животных 2-й, 3-й и 4-й лактации соотношение между полиненасыщенными и насыщенными жирными кислотами оставалось одинаковым и приближалось к оптимальному. Экспериментально установлено, что при высоких значениях уровня среднего БП ПЛБАЦ коров повышается частота генотипов АВ и ВВ каппа-казеина, что также указывает на повышенное содержание массовой доли белка в молоке.

Английский. The studies were conducted on the dairy cows of black-motley breed of the 1-5th lactation with an average milk yield for a lactation of 4250 kg of milk. The assessment methods of milk quality by the level of the bioelectric potential (BP) of the surface localized biologically active centers (SLBAC) of cows are proposed. The physico-chemical composition of milk from the experiment cows was determined and the relationship between the BP of the SLBAC and technological properties (mass fraction of fat and mass fraction of protein) of raw milk was established. The fatty acid composition of milk lipids and kappa-casein genotype of cows were also studied. The correlative relationship between the level of the average BP of the SLBAC of the cows and all studied indicators has been established. A direct correlation between the level of the relationship of the average BP of the SLBAC of the cows, fat content and the mass fraction of protein in their milk has been proved. For the animals of the 2nd, 3rd and 4th lactation the ratio between the polyunsaturated fatty acids and the saturated fatty acids remained the same and was close to the optimum. It was experimentally established that at high level of the average BP of the SLBAC of the cows the genotypes AB and BB frequency of the kappa-casein increased, which also pointed out the high content of the mass fraction of protein in milk.
