Ветеринарно-санитарная оценка продуктов убоя кур-несушек с желточным перитонитом | Veterinary and sanitary evaluation of slaughter products of laying hens with vitelline peritonitis

Английский. Experiments were conducted in processing department of poultry including laying hens culled because of diseases. The incidence of vitelline peritonitis (VP), its pathologo-anatomic peculiarities, microbial content of internal organs and meat were determined. Clinically healthy hens as slaughtered had VP at the level of 0.40-1.72, in hens affected with – at the level of 4.07-11.09%. VP has been found to be accompanied with a sharp decline in egg and meat productivity, depression, blue discoloured crests and wattles, birds with chronic VP often had signs of abdominal dropsy, ascites. Post mortem examination of hens with VP recorded signs of anemia, inflammation of anemia serous ovarian covers and other internal organs. While and red muscles of sick hens contained more moisture (by 2.10 and 2.91%), but less protein (by 1.06 and 0.32%), fat (by 0.80 and 2.02%), ash constituents (by 0.02 and 0.06%), extractive substances (by 0.32 and 0.51%). In poultry meat there was observed a rise of pH by 0.16-0.26, fat acidity value by 0.14-0.16 mg/KOH, concentrations of volatile fatty acids by 0.26-0.37 ml/KOH. The total microbial count in white and red muscles of hens affected with VP was 4.97+-0.22*10 and 6.59+-0.35*10 CFU/g, in healthy poultry – 0.27+-0.12*10 and 0.71+-0.22*10 CFU/g, respectively. In some birds coliform bacillus and salmonella were detected limiting thereby the use of dead birds and sub-products. So, the incidence of laying hens with VP under intensive poultry breeding reaches 11.09%. Slaughter products of sick hens have a lower biological value. Because of higher microbial contamination of dead hens and sub-products of hens with VP can be limitedly sold. Internal organs of consumptive hens are to be utilized.

Русский. Опыты проведены в цехах по переработке птицы, в т.ч. кур-несушек, выбракованных вследствие заболеваний. Определены инцидентность желточного перитонита (ЖП), его патологоанатомические особенности, микробная обсемененность внутренних органов и мяса. У клинически здоровых кур, подвергнутых убою, ЖП был выявлен на уровне 0,40-1,72%, у больных - на уровне 4,07-11,09%. Установлено, что ЖП сопровождается резким снижением яичной и мясной продуктивности, угнетением, посинением гребешка и сережек, у хронически больных птиц нередки признаки абдоминальной водянки, асцита. При вскрытии кур с ЖП регистрировали признаки анемии, воспаления серозных покровов яичников и др. внутренних органов. В белых и красных мышцах больных кур содержалось больше влаги (на 2,10 и 2,91%), но меньше белка (на 1,06 и 0,32%), жира (на 0,80 и 2,02%), зольных элементов (на 0,02 и 0,06%), экстрактивных веществ (на 0,32 и 0,51%). Отмечали в мясе птиц повышение pH на 0,16-0,26, кислотного числа жира на 0,14-0,16 мг/КОН, концентрации летучих жирных кислот на 0,26-0,37 мл/КОН. Общее микробное число в белых и красных мышцах у пораженных ЖП кур составило 4,97+-0,22*10 и 6,59+-0,35*10 КОЕ/г, у здоровой птицы - 0,27+-0,12*10 и 0,71+-0,22*10 КОЕ/г соответственно. У некоторых птиц обнаруживали кишечную палочку и сальмонеллы, что накладывает ограничения на использование тушек и субпродуктов. Итак, заболеваемость кур-несушек ЖП в условиях интенсивного птицеводства достигает 11,09%. Продукты убоя больных кур имеют пониженную биологическую ценность. Из-за более высокой микробной контаминации мясо, тушки и субпродукты от кур с ЖП можно реализовывать с ограничениями. Внутренние органы истощенных кур подлежат утилизации.
