Potato starch industry wastes as media for the cultivation of lactic acid bacteria

неизвестный. Potato pulp and juice are the waste produsts of the potato starch industry usually used as fertilizers. With respect to potato pulp, there are literature recommendations for its use as a raw material for bioethanol production. However, a part of potato fibre is not appropriate for that purpose, because is formed with not fermentable monomers. The aim of the study was to examine the usefulness of potato pulp and juice for the cultivation of probiortc bacteria Lactobacillus plantarum. It was found that both fresh potato pulp, as well products of its enzymatic hydrolysis are useful as cultivation medium for probiotic L. plantarum bacteria. Especially effective was potato pulp enriched with fresh or hydrolysed juice. Their number was even higher than in the MRS medium. Liquid fraction resulting for pectynolysis of the pulp was more effective as cultivation medium than the fresh pulp. Despite the high efficiency of the growth, the metabolic activity of L. plantarum cultivated in media containing potato pulp and its processing products is significantly lower than in the MRS medium.
