Cholesterol and total lipids content in raw and heat-processed chickens meat

The objective of the present study was to compare the cholesterol and total lipid content in fresh and heat-processed chicken meat. Samples consisted of white (breast meat) and red meat (drumstick meat), from the chickens risen on two farms, Farm A and Farm B. Total lipid content was determined by extraction of fat by petroleter (Soxhlet) after acid hydrolysis of samples. Cholesterol determination was performed by using HPLC/PDA system. The levels of cholesterol were significantly lower in raw and heat-processed samples of breast, in summer (p<0.01), and in autumn (p<0.05), in samples from Farm B comparing to samples from Farm A. There was significant difference (p<0.001) in cholesterol content in raw drumstick between farms; in autumn being lower in samples from Farm B. In heat-processed drumstick from the both farms, there was no significant difference (p>0.05) in cholesterol content in summer and in autumn. Total lipid content was significantly lower in raw breast from Farm B, in summer (p<0.001), and autumn (p<0.001), compared to samples from Farm A. Total lipid content in raw drumstick in samples from Farm B were significantly lower (p<0.001) only in summer. Heat-processed breast and drumstick from Farm B contained lower quantities of total lipids, in summer (p<0.001), and in autumn (p<0.001), compared to samples from Farm A. Lower content of cholesterol and total lipids in the examined samples from Farm B comparing to samples from Farm A could be associated with metabolic differences, higher competitiveness among males, different fat deposition, different nutritional needs, higher hormonal effects in female broilers, or with some other reasons.
