Un análisis de las preferencias de los consumidores de la Región de Murcia por los alimentos ecológicos y el desarrollo de los canales de comercialización

In the present thesis for the control of the organic and Ecological Foods (EF) market situation for in Spain, being the geographical area in which the study has been focused is the Region of Murcia, considered one of the most important national production areas for fruit and vegetables and the export. The national consumption levels are much lower than those obtained in other European countries, were the aim of this work is to analyze their problems and generate primary information of its key players. For this, we conducted surveys destined to the sector operators (farmers, ranchers and processors), as well as retail outlets in the region. The information generated, despite the low response rate achieved, makes a valuable radiographic dimension of the production sector and presents the main difficulties associated with the production and marketing of EF. This study has been completed by an analysis of a data generated by a survey of 450 consumers in the capital of Murcia, who manages to quantify the level of knowledge and EF consumption frequency by the interviewed citizens and their level of commitment to the environment, among other aspects considered. Another aspect studied is the respondent’s willingness to consume and pay an over price for three types of ecological aliments considered which are: milk, fresh eggs and apples. The bivariate and multivariate analyzes are used to verify the characteristics of citizens that determine a greater willingness to pay for these products and the impact on the potential demand for EF in Spain that could have as a reason, the reduction of over-pricing for this type of food, and the great concern for their health and environmental awareness
