Research of functional and technological properties of composite mixtures of wheat and haricot flour of Russian varieties | Исследование функционально-технологических свойств композитных смесей из муки пшеницы и фасоли зерновой отечественных селекционных сортов

The dependences of the rheological parameters of dough made from whole grain wheat flour, bean flour made (from common bean bred by the Omsk State Agrarian University – the varieties Omichka, Lukerya; Nerussa standard) and dough from composite mixtures of said types of flour were obtained using the Mixolab device. The effect of flour fraction (10, 20, 30, 40, 50, 60 и 90%) from common bean grown in the Omsk Region on the physicochemical parameters of the studied systems was revealed. It has been established that with an increase in the amount of bean flour in the composite mixture from 10 to 90%, a steady decrease in the time of formation of the dough (from 6.50-8.98 to 0.72-1.13 min), its stability (from 9.30-11.72 to 1.37-2.25 min), the beginning and end of the test retrogradation, the values of force moment C2 and force moment C5 characterizing the minimal consistence of dough during the deliquation phase and its maximum consistence during the end pf starch retrogradation is observed. The baking absorption of the mixtures within the content range of beam flour of 10-60% increases from 57.9 to 60.2%. For the bean flour of the Omichka variety almost all the rheological parameters had higher values as compared to the indicators of flour from the other varieties studied. The observed changes of rheological properties are associated with an increase in the total content of protein in the composite flour, as well as with changing its amino acid composition.

На приборе Миксолаб получали зависимости реологических параметров теста из муки пшеничной цельносмолотой, муки из фасоли обыкновенной (выведенных в Омском ГАУ сортов Омичка, Лукерья и сорта-стандарта Нерусса) и теста из композитных смесей указанных видов муки. Выявлено влияние доли (10, 20, 30, 40, 50, 60 и 90%) муки из фасоли, выращенной в Омской области, на физико-химические показатели исследуемых систем. Установлено, что с увеличением количества фасолевой муки в композитной смеси с 10 до 90% наблюдается устойчивое снижение времени образования теста (с 6,50-8,98 до 0,72-1,13 мин), его стабильности (с 9,30-11,72 до 1,37-2,25 мин), начала и окончания ретроградации теста, значений момента силы С2 и момента силы С5, характеризующих, соответственно, минимальную консистенцию теста во время фазы разжижения и его максимальную консистенцию во время окончания ретроградации крахмала. Водопоглотительная способность смесей в интервале содержания фасолевой муки 10-60% возрастает с 57,9 до 60,2%. Для муки из фасоли сорта Омичка почти все реологические показатели имели более высокие значения по сравнению с показателями муки из др. изучавшихся сортов. Наблюдаемые изменения реологических свойств связаны с увеличением суммарного содержания белка в композитной муке, а также с изменением ее аминокислотного состава.
