Correlation of antiradical activity of honey samples with free amino acid content

The content and composition of free amino acids with antioxidant properties may be one of the indicators to evaluate the antioxidant capacity of honey. A positive correlation between antiradical activity of honey and its amino acid content, especially proline, was established in acacia and sunflower honey. This dependence was greater than that related to the polyphenol content and can be conditioned by the synergistically interaction of amino acids with antioxidant properties with other substances in scavenging and neutralization of free radicals, thus determining the antioxidant activity of honey. Data related to the content of free amino acids with antioxidant properties and antiradical activity of honey samples can be applied for obtaining the sanogenic products with predetermined content and targeted action.
