In recent years, in the world, alternative methods has been developed for the food protection from microbiological contamination based on the application of natural antimicrobial compounds which are products of aromatic plants, or some microorganisms. Therefore, the aim of this study was to investigate the effects of essential oils on the aflatoxin-producing fungi growth and aflatoxins production. Inhibitory activity of caraway and juniper essential oils were tested against two aflatoxigenic species (Aspergillus flavus – four isolates and Aspergillus parasiticus – one isolate) using the method of agar plates. Aflatoxigenic species isolated from peant, maiz flour and popcorn. The inhibitory effect of essential oils on aflatoxin biosynthesis by A. flavus (isolated from maiz flour) was examined in the polenta. In this study caraway essential oil showed better inhibitory effect on the investigated fungi growth and on aflatoxins biosynthesis than juniper essential oil. Growth of all fungi was completely inhibited at caraway essential oil concentration of 4.5 L/g. At this concentration, aflatoxin biosynthesis was completely inhibited, too. Juniper essential oil particularly inhibited growth of examined fungi at the applied concentration of 35 g/g (from 42.4 to 79.7%). At concentration of 70 L/g, this oil showed significant inhibition of aflatoxin biosynthesis (99.98%). The obtained results showed that caraway and juniper essential oils could be efficient in food protection from aflatoxin-producing fungi and aflatoxins.
