Essential oils from spices and medicinal plants are well known in traditional medicine that is considered to be an area of interest as a potential source of antimicrobial agents. They are characterized by a broad-spectrum activity, including antifungal, antibacterial and antiviral activities. This study investigates the antifungal activity of Mentha piperita and Carum carvi essential oil on selected isolates of mold. Eight species of molds were selected for antifungal researches: Alternaria alternata, Aspegillus flavus, A. niger, A. versicolor, Eurotium herbariorum, Penicillium aurantiogriseum, P. chrysogenum and P. expansum. Mold species are isolated from buckwheat, corn and rice flour. Determination of a minimal inhibitory concentration (MIC) and minimal fungicidal concentration (MFC) was performed by the broth microdilution method. Essential oil of Mentha piperita showed antifungal activity on all tested isolates in the MIC range of 0.4–3.5 µl/ml and MFC range of 0.4–>454.5 µl/ml. The lowest MIC value was obtained for A. versicolor, E. herbariorum and P. expansum (0.4 µl/ml). The highest MIC value was obtained for A. niger (3.5 µl/ml). The lowest MFC value was obtained for E. herbariorum (0.4 µl/ml). The highest concentration (454.5 µl/ml) did not show antifungal activity against A. niger. Essential oil of Carum carvi showed antifungal activity on all tested isolates in the MIC range of 0.2–0.8 µl/ml and MFC range of 0.4–113.6 µl/ml. The most powerful antifungal activity of caraway was observed in E. herbariorum MIC/MFC=0.2/0.4 µl/ml. A. niger showed the lowest sensitivity of MIC/MFC=0.8/113.6 µl/ml. Essential oils of mint and caraway showed the most powerful antifungal activity on E. herbariorum but the least effective was against A. niger.
