Study of thermal conductivity and density of different types of spreads | Исследования теплопроводности и плотности различных видов спредов

The influence of temperature and pressure on the heat conductivity and density of 5 spread samples was studied: spread based on a mixture of plant and milk fats; cream plant spread; plant cream spread with a fat content of 50%; plant cream spread with a fat content of 30% and plant fat spread. Temperature and pressure were measured in the ranges of 5-30 deg. C and 110-190 kPa, respectively. As found, with elevating a temperature the spread heat conductivity reduced. At the same temperatures the heat conductivity in the spread based on a mixture of plant and milk fats was lower than in the rest of spreads. It is noted that with growing temperature the influence of pressure on the spread heat conductivity increased. So, at t 5 and 30 deg. C increasing pressure to 190 kPa increased the spread heat conductivity by 5.03 and 11.6%, respectively. With growing pressure the influence of temperature on spread reduced. At pressure of 110 and 190 kPa increasing temperature from 5 to 30 deg. C resulted in reducing the heat conductivity by 32.3 and 23.9%, respectively. The spread density with increasing temperature reduced. The spreads based on plant and milk fats had the least density values. With growing pressure the influence of temperature of the spread density reduced. So, at pressure of 110 and 190 kPa changing temperature from 5 to 30 deg. C resulted in reducing the spread density by 20.4 and 13.9%, respectively. The obtained results will be used for broadening the line of spread products and improving their food and dietary properties.

Изучали влияние температуры (ТМ) и давления (ДВ) на теплопроводность и плотность 5 образцов спредов (СП): СП на основе смеси растительных и молочных жиров; сливочно-растительный СП; растительно-сливочный СП жирностью 50%; растительно-сливочный СП с жирностью 30% и растительно-жировой спред. ТМ и ДВ изменяли в диапазонах 5-30 град. C и 110-190 кПа соответственно. Установили, что с ростом ТМ теплопроводность СП уменьшалась. При одних и тех же ТМ теплопроводность у СП на основе растительных и молочных жиров была ниже чем у остальных СП. Отмечено, что с ростом ТМ влияние ДВ на теплопроводность СП увеличивалось. Так, при ТМ 5 и 30 град. C возрастание давления до 190 кПа увеличивало теплопроводность СП на 5,03 и 11,6% соответственно. С ростом ДВ влияние ТМ на СП уменьшалось. Так при ДВ 110 и 190 кПа увеличение ТМ с 5 до 30 град. C приводило к уменьшению теплопроводности на 32,3 и 23,9% соответственно. Плотность СП с увеличением ТМ уменьшалась. Наименьшие показатели плотности имели СП на основе растительных и молочных жиров. С ростом ДВ влияние ТМ на плотность СП уменьшалось. Так при ДВ 110 и 190 кПа изменение ТМ от 5 до 30 град. C приводило к уменьшению плотности СП на 20,4 и 13,9% соответственно. Полученные результаты будут использованы при расширении ассортиментной линейки СП и улучшении их пищевых и диетических достоинств.
