Les antioxydants des agrumes : Action en solitaire ou matricielle ?

Французский. Les agrumes sont des fruits largement consommés dans le monde. Sur un plan nutritionnel, comme beaucoup de fruits, ils apportent des composés de nature organique et minérale connus pour jouer un rôle biologique primordial. Les antioxydants organiques font l’objet de la présente revue principalement centrée sur des études menées chez l’Homme. L’objectif est de montrer que la propriété antioxydante est clairement établie par les données expérimentales et sur les composés des agrumes de trois familles de molécules, l’acide ascorbique (vitamine), la cryptoxanthine (caroténoïdes) et les flavanones (polyphénols). Chacun des composés possédant aussi des activités biologiques indépendantes de leur propriété antioxydante, la question de l’impact d’un apport d’agrumes sur les fonctions biologiques nécessite de connaître la contribution de chacun des composés pour comprendre et expliquer le rôle des agrumes dans l’alimentation. Les données expérimentales et épidémiologiques montrent que le rôle protecteur des agrumes ne peut pas être conféré à un seul composé des agrumes, et il est proposé qu’une action additionnelle a minima soit envisagée pour expliquer l’effet biologique et physiologique des agrumes. Abstract Citrus fruits are widely consumed in the world. From a nutritional point of view, like many fruits, they provide organic and inorganic compounds known to play important biological roles. Organic antioxidants are the subject of this review mainly centered on studies in humans. The aim is to show that the antioxidant property is clearly established by experimental data on the compounds of three citrus families of molecules, e.g., ascorbic acid (vitamin), cryptoxanthin (carotenoids) and flavanones (polyphenols). Each of these compounds, also possessing biological activities independent of their antioxidant property, raises the question of the impact of intake of citrus on the biological functions that requires knowledge on the contribution of each compound to understand and explain the role of dietary citrus. Experimental and epidemiological data suggest that the protective role of citrus may not be conferred to a single compound of citrus and it is proposed that additional action a minima should be envisaged to explain the biological and physiological effects of citrus.
