Effect of harvesting time on fruit quality of salacca "Bali" ("Gondok") cv. during ambient temperature storage

Indonesia has many cultivars of salacca, one of them having high commercial value was salacca "Bali" ("Gondok") cultivar. One of an important factor determining the quality of salacca fruit was harvesting time. Objective of this research was to determine the best time for fruit harvesting.Research was done on salacca "Bali" (Gondok") cv., harvested at 4, 4.5, 5, 5.5, and 65 months after blooming. Harvested fruit then kept in storage at ambient temperature (23 °-28 °C and 80-92 % relative humidity) as single fruit with 3 replications.Result showed that during storage, all fruit treated decreasing their starch, tannin and acid content, but increasing their TSS at 4 and 4.5 months treatments; while 5-6 months treatment, their TSS were decreased. Vitamin C at all harvested time was decreased. Based on sensory evaluation, fruit harvested at 5 months was prefered by the panelists, because of its' sweetness taste and favourable texture of fruit flesh. Based on weight loss Observation, salacca "Bali" ("Gondok") cv. has 5-10 days storage life. More than 10% of weight loss, although fruit were not rotten yet, it was difficult to peeled. Younger harvested fruit caused more weight loss.
