On the question of the cheese suitability of milk from cows of the Simmenal breed of the mid-mountain zone of the Altai Republic | К вопросу о сыропригодности молока коров симментальской породы среднегорной зоны Республики Алтай

Русский. Представлены результаты исследования молока поголовья коров симментальской породы среднегорной зоны Республики Алтай. Общее количество исследуемых проб молока составило 18 образцов. Изучалась зависимость сычужной свертываемости молока от сезонных особенностей его состава. При том, что молоко отвечало требованиям ТУ 9811-153-04610209–2004 "Молоко-сырье для сыроделия", обнаружены невысокие показатели сычужной свертываемости, при чем в пастбищный период в сравнении со стойловым произошло ее ухудшение (соответственно II и III класс). Установлено, что содержание некоторых макроэлементов, входящих в казеиновый комплекс, находится в более низких значениях посравнению с оптимальными для формирование сырного сгустка. Если по содержанию кальция и фосфора молоко соответствовало нормативам, то показатели содержания калия в летний период (0,67+-0,06 г/кг) и натрия в стойловый и пастбищный период (0,20г/кг), были в 2 раза меньше нижней границы нормы. В пастбищный период достоверно снизилось содержание основных макроэлементов в молоке (кальция, фосфора, калия и магния). Очевидно, низкая степень минерализации молока является в данном случае фактором, снижающимего сыропригодные качества. Для улучшения молока-сырья производителям рекомендовано введение в рацион животных минеральных кормовых добавок, а также внесение органических и минеральных удобрений на пастбища и сенокосы.

Английский. Presented are the results of the study of milk of the Simmental cows in the mid-mountain zone of the Altai Republic. The total number of the studied milk samples was 18. The dependence of the rennet coagulation of milk on the seasonal characteristics of its composition was studied. Despite the fact that milk, in general, met the requirements of TU 9811-153-04610209-2004 "Raw milk for cheese making", low rennet coagulation rates were found, and in the pasture period, in comparison with the stall period, its deterioration occurred (classes II and III, respectively). It has been established that the content of some macronutrients included in the casein complex is at lower values than optimal ones for the formation of a cheese curd. If in terms of the content of calcium and phosphor the milk met the standards, the content values of potassium in summer period (0.67+-0.06 g/kg) and sodium in stall-feeding and grazing periods (0.20 g/kg) were twice less than the lower limit of the standard. During the pasture period, the content of the main macronutrients in milk (calcium, phosphorus, potassium and magnesium) significantly decreased. Obviously, the low degree of milk mineralization in this case is a factor that reduces its cheese suitable qualities. To improve the quality of raw milk, the producers are recommended to add mineral food supplements to the animal diets, and to apply organic and mineral fertilizer in pastures and haylands.
