Результаты мониторинга флокулообразующей способности растворов белого сахара | Results of monitoring the floccule-forming ability of white sugar solutions

Changes in food production technologies lead to the emergence of new requirements for white sugar used in their manufacture, since only the exact correspondence of its quality to the needs of a particular production allows producing a high-quality food product with minimal costs. One of the indicators that determine the raw material value of white sugar is the lack of the floccule-forming ability (FA) of its solutions upon acidification. The purpose of the study was to determine the actual FA of white sugar produced in Russia. The objects of the study were 137 samples of white sugar of categories extra, TS1, and TS2 (according to GOST 33222- 2015), produced in 2016–2020 at 58 Russian enterprises. In the samples, there was determined the FA and additional characteristics such as color in solution, ash content, turbidity of the solution, calcium content, and pH value. The FA was absent in sugar samples of the extra and TS1 categories, as well as in 67% of the samples of TS2 category. Low floccules-forming ability was noted in 23 samples of TS2 category; medium FA was noted in 6 samples; high FA was noted in 4 samples. A strong correlation was established between the ash content and color in solution for all groups of white sugar of TS2 category, as well as between turbidity and calcium content for sugar without flocculating ability; moderate and weak correlations were established for sugar showing such ability; a moderate correlation was established between turbidity and ash content for all groups. As the FA of sugar increased, the relationship between pH and turbidity increased from weak to very strong. Boundary indicators of the characteristics of white sugar, at exceeding of which the manifestation of FA are possible, are: chromaticity in solution is above 100 ICUMSA units; turbidity of the solution is more than 30 ICUMSA units; ash content is above 0.025%; calcium content is above 40 mg/kg; pH is above 7.3.

Изменения технологий производства продуктов питания ведут к появлению новых требований к белому сахару, используемому при их изготовлении, поскольку только точное соответствие его качества потребностям конкретного производства позволяет выпускать пищевой продукт высокого качества с минимальными затратами. Одним из показателей, определяющих сырьевую ценность белого сахара, считается отсутствие флокулообразующей способности (ФС) его растворов при подкислении. Исследования проводили с целью определения фактической ФС белого сахара, производимого в России. Объектами исследования служили 137 образцов белого сахара категорий экстра, ТС1, ТС2 (по ГОСТ 33222-2015), произведенных в 2016–2020 гг. на 58 предприятиях страны. В образцах определяли ФС и такие дополнительные характеристики, как цветность в растворе, содержание золы, мутность раствора, содержание кальция, водородный показатель (рН). ФС отсутствовала у образцов сахара категорий экстра и ТС1, а также у 67% образцов категории ТС2. Низкую ФС отмечали у 23 образцов категории ТС2, среднюю – у 6 образцов, высокую – у 4 образцов. Между содержанием золы и цветностью в растворе установлена сильная корреляция для всех групп белого сахара категории ТС2, между мутностью и содержанием кальция для сахара без ФС – сильная, для сахара, проявляющего такую способность – умеренная и слабая, между мутностью и содержанием золы для всех групп умеренная. По мере усиления ФС сахара отмечали усиление связи между рН и мутностью от слабой до очень сильной. Граничные показатели характеристик белого сахара, при превышении которых возможно проявление ФС: цветность в растворе выше 100 ед. ICUMSA, мутность раствора более 30 ед. ICUMSA, содержание золы выше 0,025%, содержание кальция более 40 мг/кг, рН выше 7,3 ед.
