NDF (neutral detergent fiber) is now considered the most suitable parameter for fiber characterization due to the fact that NDF contains the most important components of plant cell walls (cellulose, hemicellulose and lignin) and therefore makes it possible to divide carbohydrates into structural and non-structural (FC, NFC). A big challenge in feeding high producing cows is supply the animals with the needed amounts of energy and at the same time provide the tripe with enough fibrous substances to ensure its stable operation. Due to limited feed intake, the diets of high producing cows are rich in highly digestible non-structural carbohydrates (NFC), whose fermentation leads to the formation of a large amount of propionic acid with a strong acidic effect in the tripe, while the NDF fermentation is slower and happens on a smaller scale. Fiber content and energy concentrations are inversely related. In addition, fiber possesses an important function in the formation of layers in the tripe’s content (a mat out of coarse particles that floats on a liquid with small particles).
