Veterinary and sanitary assessment of coffee raw materials, contaminated with mold and their toxins | Ветеринарно-санитарная оценка кофейного сырья, загрязненного плесневыми грибами и их токсинами

Английский. Coffee refers to the products of daily mass consumption around the world. At the same time, there is a risk of contamination by mold fungi at all stages of production of this product. The most dangerous species are those that are capable of producing mycotoxins, among which the most dangerous are ochratoxins and aflatoxins. In this regard, it is particularly important to conduct a veterinary and sanitary examination aimed at studying the content of mold fungi, assessing their species composition and, especially, toxigenic species in raw materials, thereby preventing risks to human health. The objects of research were 20 samples of green coffee from 4 coffee-producing regions of South and Central America, Africa and Southeast Asia. The study of microbial contamination of green coffee samples showed that of the 20 samples studied, 18 (90%) corresponded to the established microbiological indicator for the content of mold fungi. According to the level of bacterial contamination in 19 samples, the number of bacteria did not exceed 5*10E5 CFU/g. When studying the internal mycoflora of green coffee beans, the contamination with mold fungi was found to be from 70 to 100%, depending on the region of origin. The main contaminants were fungi of the genus Aspergillus and Penicillum, among which potential producers were identified: ochratoxins A and B-A. carbonarius and A. sclerotioniger; ochratoxin A and fumonisins-A. niger.

Русский. Кофе относится к продуктам ежедневного массового потребления по всему миру. При этом существует риск контаминации плесневыми грибами на всех этапах производства этого продукта. Наибольшую опасность представляют виды, способные к образованию микотоксинов, среди которых самыми опасными являются охратоксины и афлатоксины. В связи с чем особую актуальность приобретает проведение ветеринарно-санитарной экспертизы, направленной на исследование содержания в сырье плесневых грибов, оценку их видового состава и особенно токсигенных видов. Объектами исследований были 20 образцов зеленого кофе из 4 кофепроизводящих регионов Южной и Центральной Америки, Африки и Юго-Восточной Азии. Изучение микробной загрязненности образцов зеленого кофе показало, что из 20 исследованных образцов 18 (90%) соответствовали установленному микробиологическому показателю по содержанию плесневых грибов. По уровню бактериальной загрязненности в 19 образцах количество бактерий не превышало 5*10E5 КОЕ/г. При изучении внутренней микофлоры зеленых кофейных зерен была выявлена загрязненность плесневыми грибами от 70 до 100% в зависимости от региона происхождения. Основными контаминантами были грибы родов Aspergillus и Penicillum, среди которых выявлены потенциальные продуценты: охратоксинов А и В - A. carbonarius и A. sclerotioniger; охратоксина А и фумонизинов - A. niger.
