Оценка эффективности совместного применения озонирования и ультразвуковой обработки для улучшения качества зерновых дистиллятов | Evaluation of the effectiveness of the combined use of ozonation treatment to improve the quality of grain distillates

Английский. A possibility of using oxidative technologies to improve the organoleptic characteristics of alcoholic distillates (AD) was studied. Together ozonation (OZ) to oxidize a number of minor ethanol congeners and ultrasonic treatment (UST) to intensify mixing of the reaction mixture were used. In the research, there was used AD produced industrially from grain raw materials on continuous-action installations. For comparison of organoleptic characteristics of the AD a tasting and sensory profile method was used, which allows visualizing the qualities of the product under study in the form of graphical profilograms of smell, taste, and aftertaste. Study of the aroma of AD samples was carried out using a multi-channel gas analyzer and the "electronic nose" technique, piezo-quartz based resonator sensors with film sorbents on electrodes were used as a measuring array. The gas chromatography method was used to determine the impurity composition of AM. The duration of combined OZ and UST varied from 3 to 15 min. According to the results of the experiment, 6 samples were selected, the processing time of which was 0, 3, 6, 9, 12 and 15 min. It has been found that during the treatment of AD at the 1st stage, the content of volatile trace impurities decreases with a slight accumulation of heavier homologues, which makes it possible to obtain a product with a harmonious taste and smell. Increasing the duration of treatment reduces the content of volatile substances (alcohols, ketones, esters, aldehydes, unsaturated compounds) and leads to the accumulation of impurities that worsen the organoleptic characteristics of alcohol. It is concluded that the optimal duration of OZ and UST is 6 min.

Русский. Изучали возможность применения окислительных технологий для улучшения органолептических характеристик спиртовых дистиллятов (СД). Cовместно применяли озонирование (ОЗ) с целью окисления ряда минорных конгенеров этанола и ультразвуковую обработку (УЗО) для интенсификации перемешивания реакционной смеси. В исследованиях использовали СД, произведенный промышленным способом из зернового сырья на установках непрерывного действия. Для сравнения органолептических характеристик СД применяли дегустационный и сенсорный профильный способ, позволяющий визуализировать качества исследуемого продукта в виде графических профилограмм запаха, вкуса и послевкусия. Исследование аромата образцов СД осуществлялось с помощью многоканального газоанализатора и методики "электронный нос", в качестве измерительного массива применяли сенсоры на основе пьезокварцевых резонаторов с пленочными сорбентами на электродах. Для определения примесного состава СД применяли метод газовой хроматографии. Продолжительность совместного ОЗ и УЗО варьировала от 3 до 15 мин. По результатам эксперимента отобрали 6 образцов, продолжительность обработки которых составляла 0, 3, 6, 9, 12 и 15 мин. Установили, что в процессе обработки СД на 1-м этапе уменьшается содержание легколетучих микропримесей с незначительным накоплением более тяжелых гомологов, что позволяет получить продукт с гармоничным вкусом и запахом. Увеличение продолжительности обработки снижает содержание легколетучих веществ (спирты, кетоны, эфиры, альдегиды, непредельные соединения) и приводит к накоплению примесей, ухудшающих органолептические характеристики спирта. Сделан вывод, что оптимальная продолжительность ОЗ и УЗО составляет 6 мин.
